a fathers day tart

I'm not much of a cook but I’m trying to lift my game and I decided Fathers Day was the perfect occasion to start. This ‘Very Full Tart’ is a recipe by Yotam Ottolenghi and it is AMAZINGLY delicious. In theory it’s very easy… in reality it took me a solid 5 hours and I had a fight with the pastry which resulted in a leaky base. As they say, practice makes perfect (and I’m clearly in need of lots!). I love cooking with fresh vegies, I’m a huge sucker for cheese (this has ricotta AND fetta, yum) and I’m not a huge fan of cooking meat so this tart suited me nicely.
(Please try not to judge me on my pastry skills. I would.)
